Comfort Food Chicken Biscuit Cups
These are such a fun and delicious meal idea when you have a craving for comfort food!
Ingredients:
- 2 cans of refrigerated biscuits (8 count each)
- 1/2 pound boneless, skinless chicken breast (approximately 1 large breast)
- 1 bag frozen peas and carrots
- 1 can cream of chicken soup
- Cooking spray for the pan
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F.
- Spray a muffin tin with cooking spray.
- Prepare Chicken:
- Chop the chicken into small bite-sized pieces.
- Cook the chicken over medium-high heat until no longer pink. Add your preferred spices (such as garlic powder, onion powder, and a pinch of salt).
- Remove from heat.
- Combine Ingredients:
- Stir the frozen peas and carrots, and the can of cream of chicken soup into the pan with the cooked chicken. Set aside.
- Prepare Biscuits:
- Open the cans of biscuits and flatten each one until it’s thin enough to fit into the cups of the muffin tin.
- Assemble and Bake:
- Fill each biscuit with the chicken mixture.
- Bake at 350°F for 30-35 minutes, or until the biscuits are golden brown.
- Storage Tip:
- If you only use one can of biscuits, keep the recipe the same. The unused portion of the chicken mixture can be frozen for up to 2 months to use as a second meal.
